Sea Bream with Black Eyed Beans and Florina Pepper

Ingredients:
- Sea Bream Fillets
- 1 tbsp Olive Oil
- 1 garlic clove
- Fresh Thyme
- 1 tsp Butter
- Salt & Pepper
For the Black-Eyed Beans Salad:
- Black Eyed Beans
- 1 Florina Pepper
- 8 Cherry Tomatoes
- 1 tbsp Olive Oil
- 1 tsp Honey
- 1 tbsp Parsley
- 3 Black Olives
- 1 tbsp Feta
- Juice from one lemon
- Salt & Pepper
- Chives
Method:
- Pre-heat a non-stick pan with olive oil and add the sea bream fillets, skin side down. Panfry for 2-3 minutes on each side.
- Add the thyme, garlic, and butter and baste your fillets.
For the salad:
- Boil the beans. Cooking times may vary based on the freshness.
- Oven bake the cherry tomatoes with thyme and honey, at 160 °C for 20 minutes.
- Mix all ingredients for the salad.
- Serve the fillets with a little Florina pepper garnish and the salad.
